Vegan Sausage Rolls
These rolls paid my bills for 2 years of my life. We bought our home with these rolls, we got married off the backs of these sausage rolls.
VEGAN SAUSAGE ROLLS👇
(makes roughly 6-8 sausage rolls)
Ingredients:
1 pack of Puff Pastry, thawed, I used Tenderflake (accidentally vegan)
1 pack of plant based sausages, I used Beyond Meat Spicy Italian
1 onion, peeled and quartered
1-2 tbsp olive oil
1 tsp salt
2 tbsp oat milk
1 tsp olive oil
Method:
Preheat your oven to 425F. On a baking sheet, place the sausages, onion, and sprinkle with salt and 1-2 tbsp olive oil. Bake for 20-30 minutes, until the sausages are fully cooked. Rotating the sausages halfway to evenly cook. Remove and set aside until cooled slightly.
In a food processor with the S blade, add the sausages and onion. Pulse until a crumble forms. Set aside.
Roll out your puff pastry into a large, thing, long rectangle. Carefully place the crumbled sausage mixture in a long line in the middle of the puff pastry, fold over and crimp with a fork to seal the two edges. Slice with a knife or pizza cutter into bite size pieces. Repeat with the remaining puff pastry and sausage mix. Place on a baking sheet.
In a small bowl, combine the oat milk and 1 tsp olive oil. Brush the sausage rolls with the oat milk mix and bake for 20-30 minutes, until golden brown on top! Dig in and enjoy!
