Vegan McRib
Why miss out on McRib season just because you don’t eat meat! The mushrooms in this recipe give the texture you want and the sauce will have you signing.
Ingredients
4 king oyster mushrooms, sliced lengthwise into long, skinny pieces
1 tsp olive oil
1/2 tsp salt
BBQ sauce
1/2 cup ketchup
2 tbsp red wine vinegar
1 tbsp soy sauce
2 tsp mustard
2 sandwich buns, toasted
1/2 onion, sliced thin
2-4 dil pickles, sliced thin
1/4 cup mayo
Method
1. In a large pan, over medium heat, add the olive oil and heat through. Add the sliced mushrooms and salt. Cook until golden brown and softened. About 5 minutes, stirring to prevent burning.
2. In a small bowl, combine the bbq sauce ingredients.
3. Using a silicon brush, brush the mushrooms with the bbq sauce until its evenly coated. Stir and continue to cook for 2 minutes. Reapply the bbq sauce again and set aside.
4. Toast your sandwich bun and place 2 tbsp mayo on the bottom of the bun, top with mushrooms, extra bbq sauce, onions and pickles and dig in!
