The only thing cottage cheese makes me think of, is all the time I spent at my own cottage growing up. We had that place up until the end of my parents marriage. It was the greatest place in the world and I think about it most days.
Ingredients:
1 cup cashews, soaked for a few hours and drained
1/2 cup water
1 lemon, juiced
1 tsp salt
1 tbsp apple cider vinegar
1/2 brick medium firm tofu
Method:
Combine everything except the tofu in a blender and blend until very smooth and thick. If itโs too runny, add a splash of water.
Add the cashew mixture to a bowl, set aside.
Cut up the tofu into a small dice, mix it into the cashew mixture and pour over your meal.
